Ingredients
Curry paste:
3 [T] curry powder mix (Kari Kapitan or Kari Lemak)
1 medium onion
2 stalks of lemon grass
1 [T] dry ground belachan
5-6 large gloves of garlic
1/2 [C] vegetable oil
2-3 lbs chicken pieces, cut up
5 medium potatoes, cut up
1 can coconut milk or 2 [C] of whole or 2% milk
2-4 [C] of water
- Using food processor. grind up paste ingredients until smooth paste
- In a deep skillet, stir fry paste in the oil on medium high heat, until fragrant, at least 10 min
- Add chicken pieces and potatoes, stir fry in paste for 2 min, then add water
- Bring to a boil, turn down heat and simmer until chicken and potatoes are done
- Add salt to taste. Add coconut milk (or milk) to taste.
- Heat to boiling and immediately remove from heat
- Serve over hot rice
