Thai Apple-Mango Shrimp Salad

Ingredients
1 lb medium or small shrimp, peeled, deveined and boiled
1/2 [C] red onion, thinly sliced
2 large Granny Smith apples
2 large medium or large mangoes, very firm but not green
1/2 [C] fresh cilantro

Sauce
1/2 [C] fresh lime juice
1 [T] water
3 [T] sugar
1/4 [C] fish sauce

  • Mix ingredients to make the sauce
  • Combine shrimp and onion, toss with some of the sauce and set aside for 1-2 hours
  • Peel and grate mangoes
  • Right before serving, peel and grate apples (do not do this ahead of time or the apples with turn brown)
  • Mix mango, apple, shrimp and onion, and the amount of sauce desired
  • Garnish with cilantro
