Ingredients
12 oz sweet Italian sausage
2 [t] olive oil
1 [C] chopped onions
2 [t] minced garlic
1 28-oz can whole tomatoes
1 can water (using tomato can)
2 [C] medium shells
1 19-oz can white beans
2 potatoes, cut into 1/2 in. cubes (optional, in case of beans, if desired)
- Crumble sausage into oil and soup pot, stir in onions and garlic
- Cook on high heat, stirring until sausage browns
- Cut up tomatoes in the can with kitchen shears
- Add tomatoes, water, shells and potatoes (if used) to the pot
- Bring to a boil on high heat, stirring once or twice
- Reduce heat, cover, simmer 7 min
- Drain and rinse beans (if used). Add to soup, simmer 4 min or until pasta is tender and beans heated through
