Egg Sausage Casserole

1 lb turkey sausage
2 1/4 [c] skimmed milk (or soy milk)
10 eggs
1 1/2 [tsp] dry or wet mustard
1/2 [tsp] salt
4 slices of bread, cubed
(or 2 [c] of dry bread cubes)
1 box of frozen chopped spinach, defrosted and well drained (optional)
1 C grated cheddar (or some other) cheese (optional)

  • Preheat oven to 350 degrees F
  • Spray a 13×9″ baking pan with Pam
  • Brown sausage and drain off all fat
  • In a large mixing bowl, mix all ingredients and pour into dish
  • Bake for 45-60 min, until knife inserted into middle of casserole comes out clean
  • Serve immediately, or at least within 30 min
  • (can refrigerate overnight before baking.)
