Swan Choo’s Bourbon Sweet Potatoes

6 medium-sized sweet potatoes (about 4 lbs)
1/2 [c] butter or margarine, melted
1/2 [c] firmly packed brown sugar
1/3 [c] orange
1/4 [c] bourbon
1/2 [tsp] salt
1/2 [tsp] pumpkin spice
1/2 [c] chopped pecans
Miniature marshmallows (optional)

  • Cook sweet potatoes in boiling water for 25 to 30 min, or until tender
  • Drain
  • Peel potatoes, and mash pulp
  • Combine potatoes, butter, brown sugar, juice, bourbon, salt, and pie spice — mixing well
  • Spoon mixture into a lightly greased 1 1/2 quart baking dish
  • Sprinkle chopped pecans on top
  • Bake at 375 degrees for 45 min
  • Remove from the oven. Turn oven up to 400 deg
  • If desired, top with miniature marshmallows and bake until marshmallows are lightly brown, about 10-15 min
