Ingredients
6 medium-sized sweet potatoes (about 4 lbs)
1/2 [c] butter or margarine, melted
1/2 [c] firmly packed brown sugar
1/3 [c] orange
1/4 [c] bourbon
1/2 [tsp] salt
1/2 [tsp] pumpkin spice
1/2 [c] chopped pecans
Miniature marshmallows (optional)
- Cook sweet potatoes in boiling water for 25 to 30 min, or until tender
- Drain
- Peel potatoes, and mash pulp
- Combine potatoes, butter, brown sugar, juice, bourbon, salt, and pie spice — mixing well
- Spoon mixture into a lightly greased 1 1/2 quart baking dish
- Sprinkle chopped pecans on top
- Bake at 375 degrees for 45 min
- Remove from the oven. Turn oven up to 400 deg
- If desired, top with miniature marshmallows and bake until marshmallows are lightly brown, about 10-15 min
