Ingredients
1 [C] couscous
1 [C] boiling water
1/4 [C] olive oil
1/3 [C] lemon juice
1 [t] salt
1/4 [t] garlic powder
1/2 [t] oregano leaves
dash of cayenne pepper
1/4 [C] green onions, chopped
1 bunch of fresh parsley
1 large tomato, chopped
1 large cucumber, chopped
1/2 can of 8 oz olives, sliced
- In a medium bowl, pour boiling water over the couscous
- Cover and let sit for 1/2 hour
- In a big bowl, combine green onions, parsley, tomato, cucumber and olives
- Drain the couscous and add to vegetables
- Add all the other ingredients and stir well
- Refrigerate several hours before serving
