Ingredients
1/2 [C] oil
3-6 [T] curry powder
1-2 [T] water
1 lb ground beef
6 med-large potatoes, cooked and mashed
2 big onions, chopped
1/2 can of coconut milk
1/2 [t] salt, maybe more, to taste
1 [t] or more sugar to taste
3 boxes of puff pastry
- Mix curry powder and water to form a paste
- Brown beef and drain. Set aside
- Heat oil and fry onions until slightly brown. Add beef
- Add curry paste and fry until fragrant
- Lower heat and add potatoes and stir until thoroughly mixed and heated through
- Add coconut milk, salt and sugar to taste
- Cool completely, preferably, refrigerate overnight
- Cut each sheet of pastry into 12 rectangles. Roll each slightly, into squares
- Add filling and seal into triangular pastries
- Bake 400 degrees, 17 minutes. Serve immediately
