Curry Puffs

Ingredients
1/2 [C] oil
3-6 [T] curry powder
1-2 [T] water
1 lb ground beef
6 med-large potatoes, cooked and mashed
2 big onions, chopped
1/2 can of coconut milk
1/2 [t] salt, maybe more, to taste
1 [t] or more sugar to taste
3 boxes of puff pastry

  • Mix curry powder and water to form a paste
  • Brown beef and drain. Set aside
  • Heat oil and fry onions until slightly brown. Add beef
  • Add curry paste and fry until fragrant
  • Lower heat and add potatoes and stir until thoroughly mixed and heated through
  • Add coconut milk, salt and sugar to taste
  • Cool completely, preferably, refrigerate overnight
  • Cut each sheet of pastry into 12 rectangles. Roll each slightly, into squares
  • Add filling and seal into triangular pastries
  • Bake 400 degrees, 17 minutes. Serve immediately

Oyster Fry

Ingredients
2/3 [C] fresh oysters, cut into 1″ pieces
1/4 [C] tapioca starch in 1/4 [C] water
1/8 [tsp] salt
1/8 [tsp] sugar
Ground pepper
2 eggs, lightly beaten
1 – 2 [tsp] soy sauce
2 – 3 [tbs] oil
2 – 3 cloves garlic, minced
1 – 2 [tsp] ginger, finely chopped
1 full stalk of green onions, chopped

  • Mix the starch and the water in a small bowl. Add the salt, sugar and ground pepper.
  • Lightly beat eggs in another small bowl, and add soy sauce.
  • Have minced garlic and chopped ginger and chopped green onions ready.
  • Add oil to a non-stick frying pan. Saute the garlic and ginger on high heat. When slightly golden, add green onion and stir-fry a few seconds.
  • Add the oysters and stir also just for a few seconds.
  • Stir the starch mixture and pour over the oysters. Immediately follow with the eggs.
  • When solid around the edges and brown on the bottom, flip over in quarters.
  • When brown on bottom, remove to platter and serve immediately with chili sauce.

Note: You can double the recipe, but unless you have a 12″ or larger pan, it is best not to.                Even with a 12″ pan, probably comes out better not doubling.

Chicken Curry with Coconut Milk, Nonya Style

Ingredients
Curry paste:
3 [T] curry powder mix (Kari Kapitan or Kari Lemak)
1 medium onion
2 stalks of lemon grass
1 [T] dry ground belachan
5-6 large gloves of garlic

1/2 [C] vegetable oil
2-3 lbs chicken pieces, cut up
5 medium potatoes, cut up
1 can coconut milk or 2 [C] of whole or 2% milk
2-4 [C] of water

  • Using food processor. grind up paste ingredients until smooth paste
  • In a deep skillet, stir fry paste in the oil on medium high heat, until fragrant, at least 10 min
  • Add chicken pieces and potatoes, stir fry in paste for 2 min, then add water
  • Bring to a boil, turn down heat and simmer until chicken and potatoes are done
  • Add salt to taste. Add coconut milk (or milk) to taste.
  • Heat to boiling and immediately remove from heat
  • Serve over hot rice
